Whatever Wednesday



I had a hard time getting back in to reading and blogging after the move so I’ve spending a lot of time cooking. Which Is really weird because I don’t like – and am not great at cooking lol

But I have a HUGE island in my kitchen and I’m such a messy cook who gets flustered easily so having all this space to experiment and make my mess has been great. I only wish that I had my FL appliances – I had a double oven *cries* and the rest of my place was as big as my kitchen lol

Here are pics and links of a few of my faves.



~ I first had this Creamy Coconut Dream pie at a local restaurant. It was the best dessert I ever had. It was SO good. I asked the waitress what was in it and then googled it. Turns out – it’s a super easy (if time consuming) thing to make so I gave it a try.

Here’s the recipe from Get In My Belly - I used a graham cracker crust (from the graham cracker crumb box – double the recipe if making the 13x9 size) instead of the oreo crumb in the recipe. It tasted exactly like the restaurant version. Kevin took some to work and I ended up having to make two pans for him to take because everyone loved it so much. It isn’t healthy AT ALL but delish!

~ I found this scamorza cheese - it's a type of mozzarella cheese (I love cheese!) and wanted to try it on something so I made Smashed Roasted potatoes.

Here is a recipe from Damn Delicious but I’ve tried a few different versions and borrow from them all. I add about 1/4 salt to the cooking water, along with a sprig of rosemary. It adds flavor and helps make the potatoes crispy when baking after the pre-boil.  I diced the cheese and put on top of the potatoes when they came out of the oven and OMG – heaven!

~ Next was Baked Asparagus Fries. I love roasted asparagus and love fried foods and these were delicious but way too much work and messy to make so I doubt I would make it again.

~ I went to the farmers market last weekend and had broccoli and radishes left over and looked for a recipe that would use both. Jessica Levinson’s blog had this super easy and yummy Roasted Broccoli Radish Salad with Lemon Mint Vinaigrette recipe. I tossed mine with farro to make a complete meal instead of using it as a side dish.

~ Super simple baked Apple Crisp for Two in these adorable little ramekins I got. I added rhubarb to the last batch since it’s in season here.

~ I do not need to eat gluten free- but have several friends who do and wanted to try a few recipes that were. These Almond Flour Chocolate Chip Cookies from Dessert for Two are very easy and quite tasty. They are on the softer side – rather than crispy.

~ One more – not pictured is Beef and Cabbage Stir Fry from Budget Bytes. This recipe has become a go to for lazy nights. It’s so versatile. The recipe uses ground beef but I have made it with ground pork, tofu and veggies crumbles. Instead of chopping up the cabbage and veggies – I use a bag of pre-mixed coleslaw and add whatever greens or vegetables that are growing in my planters or from the farmers market. SO EASY!

  3. I don’t really follow any food bloggers (I can barely keep up with my book bloggers LOL) but I do subscribe to emails from Lil’ Luna (lilluna.com). Her name is Kristyn and I like her no-nonsense recipes and menus. Those potatoes you made look divine! Potatoes are my go-to... in any form.

  5. I post recipes every one in a while when I try something new. I love cooking and trying new things but I usually try them in the Winter because in the Summer my kitchen is too hot. lol Even with the AC on it's not pretty. I don't turn the oven on at all during the Summer.

  6. All these amazing food pics are making me miss my daughter even more. I hate to cook, but she enjoyed it and was good at it. I make her cook whenever she visits.

  7. Wow for someone who doesn't like to cook, you did a lot of it! I'm not a great cook, either. Who knows? Maybe one day I'll get the cooking bug too. :-)

      And I get flustered easily so I can cook one fancy thing but the rest of the meal has to be super simple! Ha

    1. Yes! we did a remodel of our FL kitchen and got all Samsung dual appliances. I cry when I think about them :-(

  11. I have been in a cooking rut. Baked salmon, potatoes and broccoli is as adventurous as I've been getting. Your food looks amazing! I think I need to make those asparagus fries someday when I have time.

  15. OMG, this is one of my new favorite features to your blog (or have you always shared recipes, and WHERE HAVE I BEEN??). That's a shame re: the fried asparagus spears, because they look so delicious (but if a recipe involves too many steps, it's a turnoff). Funny story. B is OBSESSED with asparagus (I am, too, a little). So I told him for Halloween we should dress him as an asparagus spear and I would be Brittney (a la "Hit Me Baby One More Time") and together--BRITTNEY FREAKING SPEARS. Yea, he thought that was pretty lame, too, LOL!

    That coconut pie sounds amazing. I've never tried it before! Thanks for sharing all of these recipes and hope you have a great weekend, my sweet! XO

  17. Oh wow, these photos look like professional food! Looks to me like you are actually a very good cook because I've never made anything that wasn't dessert that looked that delicious lol. Aside from the coconut one (not a coconut fan), these sound delicious :-)

    1. That dessert is so deceptively easy lol You just layer cream cheese mixed with cool whip, pudding, cool whip. And you can make a banana version.

      The thing with me and cooking is that I can make ONE slightly complicated thing. So when I made those potatoes - I can't make a steak with it or anything lol It has to be something I fry up or microwave. I get flustered easily with cooking.

  18. Hello, please come and cook for me. I have three children and zero time to myself, and it would be wonderful if you and Kevin moved into the basement and stayed here. ;) Also, this is a pet-friendly home, and I wouldn't charge you rent, just food. <3

  19. I don't really cook. I'm ok with following recipes but my back gives out if I stand still for more than a few minutes so I need to go with things I can do quickly!

    1. That's how I am. I'm constantly googling based on food I find. Like I found that cheese so searched for what I could make with it. Same when I had the broccoli and radishes.
