karen’s adventures in cooking: One-pan chicken, sausage, and brussels sprouts

I enjoy eating. Cooking? Not so much but it’s gotta be done lol Results vary and I’ve never been able to get my food to look as good as the picture. But I came pretty close this time!

I have an older cast iron pan that doesn’t get any use and therefore isn’t seasoned very well (the nice black sheen on a cast iron pan that comes from years of cooking – forming a non stick coating). I saw this recipe for One-Pan Chicken, Sausage, and Brussels Sprouts on Serious Eats and knew I had to try it. I LOVE one pan meals, anything roastedm and this recipe also served the dual purpose of seasoning my pan.

I actually cooked this last November and meant to post about it then because it’s the perfect ta-da! meal for holiday company. Easy and gorgeous presentation. But ya know….life and all that jazz.

Here is the first layer – brussels, shallots, lemon, garlic – tossed in a little olive oil, salt and pepper

Add the meat – chicken (tossed in a very tasty rub of garlic, mustard, honey, Worcestershire sauce, rosemary and oil) and pieces of sausage. (obviously need to be a carnivore for this one! lol)

Pop in a 450 degree oven for about 30 minutes and voila! A gorgeous one-pan meal!

It really was super easy and came out just like the picture from Serious Eats (without their pretty rosemary garnish) and tasted delish! The only things I would have done differently are 1/4 my brussels sprouts instead of halving because they were kind of big and took longer to cook and didn’t get that pretty carmelization and maybe less chicken because I have a smaller pan and got a little crowded in there. 

You can make this in a baking pan if you don’t have a cast iron pan.

  1. "One-pan" meals are an absolute dream. I hate clean up SOO much. This looks yummy, I wonder if I can just use a dutch oven as well. Did you choose to make an additional side with this one or as is?

    1. It might not as crisp as well if it's a deep pan?? I'm not sure - I don't really cook lol

      I had it over farro. The juice from the lemon, honey and herbs made it delicious.

  2. I love the idea of a one pan meal. I really need to start figuring out what to eat for dinners, as I'll be starting a weight loss program and I need a lot of protein but little to no carbs...so I'm on the search!

    1. At least 1/2 the cooking magazines ont eh shelf right now are for healthy one pan meals. You should take a look.

  3. I've only heard of sheet pan dinners, but I love the idea of a cast iron skillet dinner. I'm going to try this!

  5. “It’s gotta be done” is my motto too. I’m not a big fan of cooking. This sounds and looks so delisious. Unfortunately my sons don’t like Brussels. It’s funny how sometimes you forsed not to cook your favorite meals, because none of your family like them.

    I haven’t been around for a while, but I’m glad to be able to visit your blog now. Be ready for my comments, though it would probably take me some time to check what you’ve been up to during my hiatus.

  6. That does look gorgeous! I love my cast iron but still not totally seasoned. I need to give it another boost and do a quick re-seasoning on it. Just cleaned the oven so might be time for that!

    1. I don't use mine often enough and I don't like cooking fatty foods so it's tough. What do you cook in yours since you're vegetarian....I mean for the fat. I know veggies are great in there.

  7. I'm a massive fan of one pan and slow cooker meals, so quick and easy. This looks absolutely delicious Karen, you could probably chuck in a few different veggies I assume (not a fan of sprouts). Mmm, I might try this one and throw in small halved potatoes as a substitute and see how I go. It looks magnificent Karen and turned out exactly the same as the dish on serious eats. Nice work <3

      The veggies do get soft so try something that you don't want crispy. The fat from the thighs and sausage drip down to flavor the brussels.

      I have also made this with sweet potatoes. I tried white but they came out mushy and I like crispy but I didn't mind softer sweet potatoes.

      Or you could use a sheet pan and spread it out more so everything crisps up better - although you'll lose some of the flavor I think.

  9. Oh this looks good!

    I love baking but cannot cook very well. I have a 'one pot' recipe book because I hate washing up lol I like chicken cacciatore (minus olives), and because it cooks in the sauce I can't stuff it up too badly :P

  10. Aha, I should try this! I'm all about easy recipes where you throw all the ingredients in at once and it comes out looking/tasting good. I'm used to that coming in the form of crockpot recipes and not pan in the oven recipes though so this would be a new thing to try.

    1. Same here. Then I started seeing all the sheet pan recipes and then this one. Is had ingredients that both my husband and I liked so it seemed a good place to start.

  11. That looks so good. I can make something look good, but taste? Well, not so much. LOL In fact, I wish it was the other way around. :) I really need to check out one pan meals and see if I can adapt them to my needs.
